1 small onion, sliced
dressing ingredients:
freshly ground pepper
- you can also break up into florets if you prefer

- 6 tbsp olive oil
- 1 tbsp garam masala
- 6 garlic cloves
- 1 tsp ginger (or fresh ginger equivalent)
- 1 tsp salt
- 1 tsp chilli powder
- 1 lemon - zest only
freshly ground pepper
- Oven at 190C.
- Remove and retain the cauliflower leaves, and cut out the solid stem, leaving the head whole.
- Mix the dressing ingredients together.
- Place the head in the centre of a baking dish, arrange the onion and cauliflower leaves around it.
- Brush most of the dressing mixture over the head, leaves and onion.
- Cover with foil.
- Bake in the oven for 30 minutes.
- Remove the foil, brush over the remaining dressing.
- Bake for a further 15 minutes until just tender crisp, and just starting to char. You may wish to (carefully) use the grill to finish off.
- Dress with the parsley and freshly ground pepper
